Transforming fresh chicken eggs into marketable value-added products enables 45 members of Special Area for Agricultural Development (DA-SAAD) Program farmers association to increase their income and enhance entrepreneurial activity in their community.
The Aripdip Farmers Association (AFA) members attentively learned how to cook leche flan and meringue which could be served as snacks for students in the nearby elementary school in Brgy. Aripdip, San Rafael, Iloilo. The value-addition activity of the association also developed their practical skills in transforming fresh eggs produced into value-added products which further opened other opportunities.
This venture diversified their sources of livelihood, reduced post-harvest losses, and tickled their innovativeness to discover their competitive advantages anchored on a strong members’ collaboration in the agriculture-related activities.
Ma. Leah G. Danasco, Professional Food Technologist, skillfully taught the participants on the proper selection and handling of eggs, ingredient preparation, processing techniques, food safety and sanitation practices, quality control, as well as appropriate packaging and labeling. The practical sessions and hands-on training enabled participants to apply the techniques firsthand and gain confidence in producing quality egg-based products that meet market standards.
SAAD Program’s commitment in strengthening sustainable livelihood opportunities for AFA members through value-adding interventions will truly enhance community-based enterprises, improve household income, and contribute to local food security and rural economic growth.
Armed with their newly acquired knowledge and skills, the association is now better positioned to expand beyond primary production and venture into profitable egg-based food processing enterprises with target markets in the neighboring towns.###
